What links Ethiopia, the Caribbean and Jersey?
A mellow mint and lemongrass mojito of course.
We’re celebrating the beginning of summer with our friends at Tidal Rum, a fellow planet-positive seaweed-infused Rum that sustainably harvests pepper dulse seaweed, trimming rather than picking to allow the plant to regenerate.
This mojito is a play on the original but with the added depth of subtle flavours-- earthy spearmint and moringa brightened by lemongrass, fused with the subtle truffle flavour of Jersey's pepper dulse seaweed. If that doesn’t tempt you enough, read on for the recipe to try it out for yourself.
Mint lemongrass mojito
makes 2 mojitos
For the simple syrup:
- ½ cup water
- ½ cup sugar
- 1 sachet mint, lemongrass, moringa
To make the cocktail:
- 4 wedges lime, juiced
- ½ bunch freahmint leaves
- 30 ml simple syrup
- Good splash soda water
Method:
- To make the simple syrup; in a small saucepan over high heat combine the sugar and water until it dissolves. Once it comes to a boil, turn mixture it off, ensuring the sugar has dissolved. Leave the teabag to steep. Allow to cool completely before removing the tea bag.
- To make the cocktail, place a few sprigs of fresh mint in the bottom of a short glass. Muddle in the glass with the simple syrup. Add in crushed ice, pour in lime juice, rum and top with a splash of soda water. Garnish with a few more mint leaves and lime wedges as garnish.
